Q: How Many Celiacs Does It Take to Change
a Label?
A: All of us!
The
Food Allergen Bill (S.741) was signed into law by President
George W. Bush on August 2, 2004! The law, requiring food
manufacturers to label the top eight offenders – eggs,
fish, milk, peanuts, shellfish, soybeans, tree nuts, and wheat
– and to use plain English like "milk" or
"wheat" rather than less familiar words like "casein"
or "semolina" on labels, will go into effect on
January 1, 2006. No longer will we have to track down the
source of, let's say, starch or dextrin. If the product is
made in the U.S. and the ingredient is derived from wheat,
the label must disclose that fact. Next step: A label that
discloses all sources of gluten. There's nothing determined
celiacs can't accomplish.

National Institutes of Health (NIH) Consensus Panel
Finds Celiac Disease Under-Diagnosed
Panel Recommends Six Key Strategies
for Disease Management
Bethesda, Maryland
– Celiac disease is considerably under-diagnosed, according
to an independent consensus panel convened by the National
Institutes of Health (NIH). The panel, charged with assessing
all of the available scientific evidence on celiac disease
announced today its recommendations for the appropriate diagnosis
and management of this disease, which was previously believed
to be rare. Celiac disease may affect 3 million Americans.
The disease is present in 0.5 to 1% of the U.S. population,
ten times higher than previous estimates.
